  • The Blend: It is a co-fermentation of over 100 to 150+ rare, indigenous Georgian grape varieties (including red, white, pink, and green grapes) originally provided to the winery by the Ministry of Agriculture to help research and preserve ancient ampelography. 
  • Name Meaning: "Poliphonia" comes from the Greek word for many voices, honoring Georgia's traditional harmonic polyphonic singing.
  • Winemaking: The grapes undergo spontaneous fermentation and aging in traditional underground clay jars called qvevri. The wine is made with minimal intervention, no oak aging, and is bottled unfined and unfiltered with little to no added sulfites.
  • Taste Profile: Because it blends both white and red grapes together, the resulting wine behaves almost like a dark rosé or a light, savory red. It features a vivid, translucent color with citrus and tea-like tannins, sappy red fruit, and earthy minerality.
